1 slice of Ezekiel Low Sodium Bread
1 cup of plain cottage cheese (I love the Muuna brand)
1 tsp of ground flax seed
Sprinkle of fresh ground pepper
Toasted pumpkin seeds
Pinch of sea salt
Heat your frying pan over a medium heat. Add your pumpkin seeds to your heated pan till your seeds start to turn brown and start popping. Set aside.
While your seeds are browning on your frying pan you can start lightly toasting your bread. Place on a plate when your toast is ready.
Scoop out your cottage cheese onto your toast. Sprinkle your fresh ground pepper onto your cottage cheese. Add your toasted pumpkin seeds on top of your cottage cheese. Finish off with a dusting of fresh ground flax seed and some sea salt.
